I was given a jar of honey with walnuts by a friend who has also been given it and did not know what to do with it. I didn’t either until I was looking through a recipe book, saw a recipe for Treacle Tart and thought why not Honey Tart? It worked so here it is!
- 5 oz 140g Plain flour
- 2 ½ oz 70g mixed hard marg and lard or all hard marg or butter
- 4oz 100g fresh breadcrumbs
- 7 – 8 tbsp runny honey (stand the jar in warm water to loosen)
- Juice of ½ lemon
- A handful of roughly chopped walnuts
- Heat oven to 200oC, fan oven 180oC, 400oF gas 6
- Rub the fat into flour until it looks like breadcrumbs
- Bind to a soft but not sticky dough with a little cold water
- Roll out to the thickness of a £1 coin on a floured surface and line a faln tin about 8ins, 20cm diameter
- Chill while you are preparing the filling
- Mix the warmed honey, lemon juice and walnuts
- Place in the pastry case and use any left over pastry to make a lattice top or decorate the top
- Bake for about 25 – 30 mins until the pastry is golden
- Best served warm rather than hot
Variations
Use heather honey to get a real New Forest flavour
Use what ever nuts you have to hand
Serve with cream although crème fraiche is a pleasant contrast to the sweetness of the tart
Leave out the lemon juice and add 1 tbsp of Seville orange marmalade |
