Loose Hanger goats cheese, apple and watercress brushetta

Serves 2

  • 90g Loose Hanger goat willow goat’s cheese
  • 4 slices of rustic bread, ciabatta or baguette would be fine
  • 2-3 tbsp olive oil
  • Salt and pepper
  • 50g watercress
  • 1 apple, cored and sliced thin
  • Handful of walnut pieces roughly chopped
  • Salad dressing of your choice – Spice and Easy’s honey, mustard and garlic is good

  1. Lay the bread on a grill pan or baking tray in a single layer.
  2. Drizzle with the oil and season.
  3. Grill or bake until golden, turn over and do the other side.
  4. Layer with the goats cheese, apple and watercress and sprinkle the walnuts on the top.
  5. Drizzle with the salad dressing and serve straight away while still crisp.

Variations

Use pear instead of apple.

Prepare ahead and assemble at the last minute. Toss the apple or pear in lemon juice to prevent them going brown.

Toast the walnuts for a better flavour.
