When did you set up Tailormade Desserts?

I set up Tailormade Desserts in April 2006, after 16 years working as a chef in major hotels in London, Gloucester and Hampshire.

Tell us a bit about your chef backgound?

I trained as a chef at Cassio College in Watford. After graduating, my first job was at The Langham hotel London, as a general chef. I then worked at Gary Rhodes restaurant the Green House. During this time, I developed a passion for pastry and desserts, so I moved to the Course Lawn Hotel in Gloucester and my pastry career took off. Over the next 16 years, my career progressed, becoming 2nd Head Pastry Chef at the Chewton Glen, then Head Pastry Chef at Lainston House in Winchester.

So, what do you produce?

I create hand crafted desserts, traditional and bespoke, afternoon tea, picnics, dessert hampers, fudge, petit fours and wedding favours.

Where can we buy some of your desserts?

My desserts are available at various pubs and restaurants in the New Forest, direct at New Forest Producer Markets, and also by phone or email.

When did you join the Marque?

I joined about six Months ago.

Why did join the Marque?

Because, I am passionate about using local ingredients whenever possible.

How have you benefited from becoming a Marque member?

The Marque has opened new doors and given many new leads. Business has increased 15% over the last year.
